Luque, winner of the best salad in the region in 2021, takes over from Pepa Muñoz. Previously, Mario Sandoval (2016), Javier Estévez (2017), Iván Muñoz (2018), Miriam Hernández (2019), Daniel Ochoa and Luis Moreno (2021), Julián Mármol (2022), and Juan Pozuelelo (2023).

Novillo valued her research to obtain healthy, nutritious, and attractive cuisine at the University of Navarra clinic in Madrid, innovating and adapting diets for patients with various pathologies. He also highlighted the importance of promoting the certified product SEAL M, which has 505 affiliated companies and 4,143 references, and is increasingly present in the hospitality and restaurant industry.

She also participated in Presentación that Luque prepared, with the ship JAPO-CHULAPO composed of «senseless» lamb ravioli from Colmenar Viejo, infusion of its juice, spheres of Lombarda from Aranjuez, Vermouth from Madrid, and regional garden vegetables. All this complemented with Regajal, included in the Protected Designation of Origin (PDO) wines of Madrid.

At the same event, the councilor presented the campaign It’s always the season to eat in Madrid. The regional government aims to promote zero-kilometer products to the specialized public participating in this prestigious event organized until Wednesday.

V edition of the Madrid gastronomic contest

Today, the final of the V Food Madrid contest took place in Madrid, organized by the regional government with the Regional Association of Cooks and Bakers (Acyre). It was chosen by six finalists who prepared a dish with IGP Drenda meat from the Sierra de Guadarrama and two ingredients with the certified M product. The pairing had to be with a white, rosé, or red wine from the PDO Wines of Madrid. After cooking this final phase of the contest, the jury chose Salvador Melgar from the Tabefe restaurant in Gran Canaria for his recipe of Iberian game meat pie from the Sierra de Guadarrama with trumpets of death, caramelized onion, oil, and herbs from the region, paired with Greco red wine from the PDO Wines of Madrid, from Bodegas Jeromín.
